C7 changing pen, fill and gradients en mass

We fax proofs to certain clients.  Since the faxes are black and  
white, often the color on color values on the actual page make the  
faxed copy hard for the client to decipher.  As a workaround, in C4  
we would select all, then go to the color palette and do the following:
Set the gradient to White
Fill to White
Pen to Black

to illustrate, make a rectangle with a fill of 100% Magenta, pen of  
100% Green and type a big price of 100% yellow.

After completing the workaround in C4, the box would be white with a  
black rule and the price would be black.

How do I do this in C7?  (I think I know what you're going to say,  
but I'm going to throw it out there anyway!)
