The best way would be to plan ahead and have every element and all
text be based on styles. Then when you're ready to fax, edit the base
styles and change the colors there. That way, everything can be
changed to black or white with very minimal fuss.
But if you don't do that, the best way would be to write a script
that does it for you. You can do it from the Colors palette, but you
won't be able to simply Select All and set the colors, because that
won't change the colors of contained or embedded elements.
BTW, you can change the color of text without activating each text
block by selecting the text elements and holding down the option key
when you click on a color in the Colors palette. If the text is not
outlined, set the part control to frame before option-clicking the
color so it will set the text's text color and not the fill color
(which would also turn on outline).
