Are you running OS X 10.5.x? If so, the preview you see is  
(annoyingly) no longer provided by the application, but instead comes  
from Quick Look. You have to rely on OS X or 3rd party "generators" to  
provide thumbnails for all files now. I wrote a Quick Look generator  
for Creator document files quite a while ago, but I can't find it on  
the web site. I'm not sure why it has never been posted there. I'll  
have someone post it. I've stuck it on my personal site for now so you  
can get it now.

It's there now, and I'll leave it for a few days. You still probably  
won't be able to see thumbnails for eps files. I'll submit a bug to  
Apple that they provide a QL generator for them, or at least let the  
application provide the thumbnail when Quick Look doesn't know how to  
generate one for a file.
