Color profiles and EPS

Having problems with assigning color profiles to Eps' when exporting. The
option is grayed out. But this isn't the case all the time.

Also I have a GATF created color profile Specific to our press I would like
to load into creator.

Normally we would be using our Asura program to assign the color profile but
do to transition period. This won't be happening for 2 weeks
